Thermomix savoury scones
Oh I think this is the first official Thermomix recipe I’ve posted. Yes I still have it and yes I still love it. 🙂 I use it mostly for prep work rather than actual cooking (with the exception of making sauces and custard, which it excels at). It does also make great scones, in about 5 minutes, so I use it a lot for that.
(Yes I know, I purchased a ridiculously expensive machine and I basically use it to chop things and make sauces and scones – let me live, okay…)
Okay, scones! I made these scones the other week for a potluck at April’s place, and I think they’re really good (toot toot). I’ve used the base recipe before (ie without the bacon, cheese and spring onions) to make sweet scones and they’ve always been excellent – fluffy and delicious.
If you have a TM try these. 😀
Ingredients
- 50g bacon (about 4 slices)
- 50g cheese
- 40g spring onions (2-3 stalks), rinsed, roots removed and roughly cut into several pieces
- 430 g self-raising flour
- 2 tsp baking powder
- 1/2 teaspoon salt
- 200g thickened cream
- 125g cold water
Instructions
- Preheat oven to 200°C.
- First, fry the bacon in a frying pan until cooked and crispy. Set aside to cool. Once cool, mix in the TM at speed 6 for 5 seconds. Remove from the TM bowl and set aside.
- Add the cheese to the TM bowl and mix at speed 8 for 3 seconds. Remove from the TM bowl and set aside.
- Add the spring onions to the TM and mix at speed 9 for 5 seconds. Remove from the TM bowl and set aside.
- Place the rest of the ingredients - flour, baking powder, salt, cream and water - into the TM bowl. Mix for 10 seconds on speed 6 to combine.
- Add the bacon, cheese and spring onions to the bowl.
- Set the dial to closed lid position and knead for 1 minute on interval setting.
- Place mixture onto lightly floured surface and press out until 2cm thick.
- Cut into squares - you should get about 12 - and place on a lightly oiled oven tray about 1cm apart.
- Bake for 15 minutes, or until golden brown and cooked through.
Notes
You can make sweet scones by omitting the bacon, cheese and spring onions, and adding a tablespoon of icing sugar to the recipe.
